Vegetarian/ Vegan Tofu Salad

I know this isn't the most creative recipe you'll see but maybe you've never tried tofu and this is a very easy and delicious way to make it and I'm sure everyone will love it! Hopefully people will stop telling you that eating vegetarian or vegan is boring and that you only eat plants! Cook this and prove them wrong! You can also get more creative and add more ingredients like rice, garbanzo beans, beans, avocado, quinoa or whatever you can find in your fridge. Ingredients:
- 350g tofu (you'll have plenty to save for later)
- peanuts
- pumpkin seeds
- sunflower seeds
- chia seeds
- tomato pesto
- spinach
- arugula
- lettuce
- soya sauce
- curry
- rasel hanout
To make the tofu:
1) Slice up your tofu into tiny squares, put them on a pan and add soya sauce,

2) Add in the curry and rasel hanout spices (you can add more spices if you want!)


3) Let everything cook for about 5 minutes and put the tofu in a container.

4) You're almost done! Now you just have to grab a bowl and put whatever you want to put on your salad. I decided to use arugula, spinach and lettuce as the base. Then I added about a tbsp of sunflower seeds and a tbsp of pumpkin seeds. I then added some peanuts, a tsp of chia seeds, some tomato pesto and then I put the juice of half a lemon.
